Chicken Noodle Soup – It WILL Heal You*
As always, we’re committed to giving you recipes, not our life stories, so I’ll be brief…
We’ve all been afflicted with ‘man flu’ recently and a big bowl of placebo-soup fixed us right up.
*(There is a bit of science in its healing powers, but it might not heal you.)
Make a big batch, if you’ve got a GSN Insulated Flask, take it with you!
If you’re more a watcher than a reader, there’s a Youtube Short at the bottom of this page.
What You Need:
- 3 Ready Cooked Chicken Breasts
- 1L Chicken broth (grab it from the butcher if possible)
- 200g Noodles or long pasta – Use what you’ve got lying about or we recommend a nice fat Udon noodle
- 2 Carrots
- 2 Celery Sticks
- 1 Leek
- 1 Garlic bulb
- 1 Large onion
How To Do It:
- Defrost your chicken in the fridge overnight
- Add broth to a large pot, halve the garlic horizontally and throw it in, turn the heat on low
- Slice carrots, celery, leek and onion
- Gently pan fry the veg to sweeten and soften – don’t brown them, add to broth.
- Roughly shred the chicken – we find pulling it apart with two forks works well! Add to the broth and turn the heat to medium.
- When it starts to bubble, add your pasta/noodles and simmer for one minute less than the pack states.
- Serve, avoiding the garlic bulbs.
