Festive Chicken Cranberry & Brie Parcels
They’ll think you’ve worked harder than you have with these easy Chicken Cranberry Brie Parcels! They’re a healthy and festive appetiser that blends sweet and savoury flavours with tender chicken, tangy cranberries, and creamy brie in a light filo pastry shell.
They offer a flavourful and sophisticated option for holiday gatherings without the heaviness of traditional appetisers.
Packed with lean chicken and antioxidant-rich cranberries, these treats provide a nutritious alternative for those looking to enjoy the holidays without overindulging.
Ingredients:
This should be enough to make eight Easy Chicken Cranberry & Brie Parcels…
- Filo Pastry:
- 2 packages (approximately 480g) puff pastry
- Butter or olive oil for basting
- Filling:
- 2 cooked chicken breasts, cut into 1.25 cm pieces
- 150g fresh cranberries, if you can’t find them; a jar of whole cranberry sauce will work
- 80ml honey
- 45ml water
- 5g mustard powder or paprika
- 115g brie cheese, cut into small chunks
- 30g finely chopped pecans
- 2 tablespoons (about 6g) minced fresh sage
Instructions:
Preheat your oven to 180° and defrost your GSN Chicken Breasts as per the pack instructions.
- Prepare Filo Pastry:
- Prepare the pastry according to the package instructions
- Trim into lengths approx 4cm wide
- Cover with a tea towel to prevent it from drying out
- Make Cranberry Sauce:
- In a medium saucepan, combine cranberries, honey, water, and mustard powder.
- Bring to a boil, then reduce heat to medium and cook, stirring, for 5 minutes until cranberries burst.
- Remove from heat and set aside to cool slightly.
- Assemble The Parcels:
- Starting at the end of the filo strip, brush a section with a thin layer of melted butter (olive oil if you’re being healthier), and layer one strip atop another
- Add the cranberry mixture, brie, and chicken then fold diagonally to make a triangle
- Brush the next few centimetres of pastry then fold again
- One more brush and fold, sealing the edges
- Place in the oven and bake for 8-10 minutes until the pastry browns.
- Garnish and Serve:
- Remove from the oven, drizzle with honey and sprinkle with chopped nuts and sage
- Serve warm.
